Rene, you've been asking for some "Tried and True" recipes. Here are a few:
Honey-Baked Curried Chicken
4 TB (1/2 stick) butter
1/4 c honey
1 TB Dijon or yellow mustard
1 tsp. curry powder
4-5 chicken breasts or 3 1/2 lbs of chicken pieces
Preheat oven to 350 degress.
Melt the butter in the microwave and add the honey, mustard, and salt. Mix well.
Dip the chicken pieces in the sauce and turn to coat them on all sides.
Place in a 9x13 baking pan.
Bake, uncovered, for 30 minutes. Turn and bake for another 20-30 minutes, basting ocasionally, until the chicken is cooked through and nicely browned.
Serve with rice or noodles.
Serves 4-5
No Peek Stew
2-3 lbs of "stew meat", I use extra-lean
1 can of Campbell's Cream of Chicken-Mushroom Soup
1/2 c. of gingerale
1 package of Lipton Onion Soup Mix
1 4 oz. jar mushrooms, drained
Preheat oven to 300 degrees. Combine all ingredients together and mix well. Pour into a casserole dish and cover tightly. Bake 2 1/2 - 3 hours. Don't peek! Serve over pasta, rice or mashed potatoes. This smells wonderful when it's cooking.
Well, it's been a while. Like a whole LOT of while. Is anyone out there
from the old blog days? If so, it would be mighty fine to see you.
Rather a lot ...
