My doctor recently put me on steroids to help with my Crohn's disease. I'm thrilled to finally have some energy (after months of feeling bad), and my house is getting clean and organized. It's hard to relax, though.
I'm getting ready to start Imuran, a new medication for me. It should help both my small intestine and colon, places where my disease is active.
Rene, you've been asking for some "Tried and True" recipes. Here are a few:
Honey-Baked Curried Chicken
4 TB (1/2 stick) butter 1/4 c honey 1 TB Dijon or yellow mustard 1 tsp. curry powder 4-5 chicken breasts or 3 1/2 lbs of chicken pieces
Preheat oven to 350 degress. Melt the butter in the microwave and add the honey, mustard, and salt. Mix well. Dip the chicken pieces in the sauce and turn to coat them on all sides. Place in a 9x13 baking pan. Bake, uncovered, for 30 minutes. Turn and bake for another 20-30 minutes, basting ocasionally, until the chicken is cooked through and nicely browned. Serve with rice or noodles.
Serves 4-5
No Peek Stew 2-3 lbs of "stew meat", I use extra-lean 1 can of Campbell's Cream of Chicken-Mushroom Soup 1/2 c. of gingerale 1 package of Lipton Onion Soup Mix 1 4 oz. jar mushrooms, drained
Preheat oven to 300 degrees. Combine all ingredients together and mix well. Pour into a casserole dish and cover tightly. Bake 2 1/2 - 3 hours. Don't peek! Serve over pasta, rice or mashed potatoes. This smells wonderful when it's cooking.
Master Munchkin is chilling out in the Infield. This is his first year playing TeeBall and he loves it (well, the games more than the practices). Go Hot Lava!
